  2. Place a pan of veg. Oil in heat for shallow frying on a vry low heat
  3. Then pour the egg mixture on the hot veg.oil
  4. Please do not stir,allow the egg to incorporate to d edges of the pan to maintain the round shape like when frying pancake
  5. When it is almost done,arrange the sliced plantain on top of the egg on heat,sprinkle little oil on it and use the flat egg spoon to press the plantain down in order to avoid it from removing by the time u turn it up side down
  6. Wen the edges of the egg nd plantain is becoming brown,turn it up side down and leave for 2mins till done
  7. Switch off the heat,cover the pan of frittata with a round bowl and turn it up side down to d bowl.
  8. Serve
