  6. Prepare 1 tomato
  7. Prepare 2-3 teaspoon red chilli powder
  8. Take 2 tea spoon jeera powder
  9. Make ready 1table spoons of oregano
  10. Make ready 2 tablespoons of chilli flakes
  11. Prepare 1-2 teaspoon tomato ketchup
  12. Get 1/4 cup Rajma
  13. Prepare 1/4 cup sweet corn
  14. Get 1/4 cup Jalapeno
  15. Make ready 1/2 cup cheese
  16. Get 3-4 teaspoon oil
  17. Take as required Coriander leaves
  18. Take 1.5 cup water
  19. Take to taste Salt

Steps to make Potful Mexican Rice:

  1. Clean and soak 1 cup of rice into water for 15-20 min
  2. Prepare tomato puree (grill tomato and then make puree from it by removing it’s skin)
  3. Boil Rajma and sweet corn keep aside
  4. Heat a pan add oil. Once oil is hot add onion, garlic paste fry it until it cooks completely.
  5. Add finely chopped bell peppers (green, yellow and red), green pease and mix it well.
  6. Add Tomato puree, red chilli powder, jeera powder, oregano, chilli flakes, tomato ketchup and mix all ingredients.
  7. Now add soaked rice for 1 cup of rice add 1.5 cup of water. Mix it well and close the lid for 5-8 minutes.
  8. Now open the lid add boiled rajma, sweet corn, jalapeno, Coriander and salt to taste. Close the lid again and let it cook until rice cooks completely.
  9. Now switch off the gas add 1/4th cup of cheese to it and mix it well.
  10. While serving add remaining cheese on it. And have the yummiest spicy Mexican Rice
