  1. Take 1 cup rice soaked
  2. Prepare to taste Salt
  3. Make ready 1 tsp kashmiri Red chilli powder
  4. Make ready 2 tsp Oregano
  5. Prepare 1 cup mix vegetable (Carrot capsicum, potato) chopped
  6. Make ready 1/2 cup Green Peas
  7. Get 1 tsp Cumin powder
  8. Take 2 tsp Garlic cloves finely chopped

  10. Prepare 2 Finely chopped onions
  11. Get 4 Tomato puree
  12. Make ready 1 tbsp Schezwan chutney
  13. Prepare 1 tsp Black pepper powder
  14. Get 1 tbsp Butter
  15. Prepare 2 cups Water
  16. Take 2 tsp Coriander leaves for garnish

Steps to make Mexican Rice:

  1. Firstly chop all the vegetables and puree the tomato
  2. Next in a pan add oil,butter & garlic mix well next add onions cook till it becomes transculent next add cumin powder,black pepper, salt and add rice and mix well for 5 min make sure you dont break rice
  3. Once rice get tossed with mixture well next add all veggies & green peas and mix well
  4. Add tomato puree and mix well next add oregano,schezwan chutney & red chilli powder and mix it lastly add salt again if required and add water and mix well close the lid and cook for around 25 minutes till rice & veggies get cooked properly.
  5. After 25 minutes check it if it’s done switch off the flame.
  6. Serve hot by garnish with coriander leaves.
