- Prepare 1 1/2 cup clean blackeye beans
- Get 1 small to medium size onion
- Get to taste Salt
- Take 1 large egg

- Soak your beans with some warm water in bowl.Let it sit for at least 20 minutes.
- Peel off the skin by rubbing them against each other or use a grater. When using the grater be careful not to cut yourself.
- Once most of the skin is off, carefully strain it off until all the skin is separated from the beans leaving the beans squeaky clean.
- Add some water to the clean beans and let it sit for 10 minutes.
- Remove the skin from the onion and cut in half. Chop one half of the onion finely. Chop the other half into rough cuts.
- Strain the beans through a sieve and pour in the blender. Add the egg and the rough chopped onions to the blender.
- Add about one third cup water. The batter should be like a thick custard. If the blender blade isn’t moving add water but at a little at a time until you reach the correct consistency.
- Once everything is blended pour in a bowl and scrape out what is left with a spoon or spatula.
- Add the chopped onion and season with salt to taste. Be careful as it becomes salty after frying. Mix with a whisk for about 2 to 3 minutes.
- Heat some cooking oil in pan, enough for the batter to float. Make sure the oil is hot before frying.
- Scoop with a dessert spoon and fry until golden brown on both sides.
- Remove and drain on a paper towel. - Serve with some pap or bread.
