  1. Make ready 250 g Amla/Gooseberry
  2. Make ready 5-7 Green chilli
  3. Take 3-4 tbsp mustard oil
  4. Take 1/2 tsp ajwain seeds
  5. Make ready 1/2 tsp sarso / mustard seeds
  6. Make ready 1/4 tsp methi/fenugreek seeds
  7. Prepare 1/4 tsp jira /cumin seeds
  8. Take 1 tsp saunf / fennel seeds
  9. Take 1/4 tsp kalonji / black cumin seeds
  10. Prepare 1/2 tsp turmeric powder
  11. Prepare 1 tsp amchur/dry mango powder
  12. Make ready 1 &1/2tsp salt
  13. Get 1 tsp kasmiri mirch powder
  14. Prepare 2 pinch hing/asafoetida

Instructions to make Instant Amla Pickle:

  1. Wash amla and green chili very well and dry it with kitchen towel
  2. Cut amla and chilli into small pieces..
  3. Heat a thick kadhai or pan add mustard oil. Keep the flame on low and add hing, ajwain, jira, methi, sarso, kalonji and saunf - mix and stir all for 1 minutes then add powder masala haldi, kasmiri mirch and amchur mix all well, make sure spices should not burn… then add chopped amla- chilli pieces and salt again mix everything…
  4. Cover pan /Kadhai with lid and in low flame cook for 15 minutes or until amla pieces become soft. - Stir 2-4 times in between.
  5. Delicious amla Pickle is ready. - Store it for 15 - 20 days in refrigerator.
