  9. Get 4 oz cream cheese, softened
  10. Prepare 1 grated parmesan cheese, optional

  1. Preheat oven to 400
  2. In large bowl combine the brussel sprouts, 3Tbsp oil, 1/4 tsp each salt and pepper; toss to coat.
  3. Transfer to a greased 10x15 baking pan, Bake uncovered at 400 for 30-40 mins or until tender.
  4. Meanwhile, cook pasta according to package directions, drain, reserving 1 cup pasta water
  5. In skillet, saute onion and garlic in butter for 1-2 mins.
  6. Stir in bring to a boil; cook until liquid is reduced by half
  7. In food processor, combine the onion mixture, reserved pasta water, and remaining salt and pepper
  8. Cover and process until smooth. CAUTION LIQUID IS HOT, I place a dish towel over processor while processing
  9. In large saucepan, combine brussel sprouts, pasta, onion mixture, cream cheese and remaining oil
  10. Cook over Med heat until heated thru and cream cheese is melted, stirring frequently.
  11. Garnish with parmesan cheese if desired, Enjoy!
