- Heat the milk in a pan with the vanilla extract, then remove from the heat.
- Beat the egg yolks and sugar in a large bowl, add this mixture to the rest of the warm milk in the pan and whisk over the heat for 3-4mins or until thickened and smooth. Remove from the heat and leave to cool.
- Fill the cooked pastry case with the custard. (Was the green bit) and slice the strawberries and arrange on top of the custard.
- Brush with the warm apricot glaze. Decorate with extra fresh fruit and glaze again. Chill before serving
- Serve with one scope of vanilla ice cream
