  9. Crack all eggs and stir (I usually add some salt and pepper to taste) until eggs are slightly forming
  10. Stir in all vegetables
  11. Stir in sausage and
  12. Stir in parmigiano reggiano
  13. Top the mixture with mozzarella
  14. Sprinkle scallions on top of mozzarella
  15. Place pan in middle of oven and cook for 15 minutes or until the egg is set
  16. Turn up the oven to broil (or 500F) and finish for a couple of minutes until cheese is slightly brown
  17. Remove from oven and let sit for 3-5 minutes
