  1. Take 8-10 Indian Gooseberry /amla
  2. Take 1 inch Ginger / Adrak
  3. Make ready 5-7 tbsp Jaggery Powder
  4. Get 5 Green Chillies / Green chilli
  5. Prepare 1 tsp Laal mirch powder
  6. Make ready 1/2 tsp Haldi Powder
  7. Prepare 1 tsp Salt
  8. Take 1/2 tsp black salt
  9. Prepare 3 tbsp Cooking Oil
  10. Take 1/2 tsp Kalonji
  11. Take 1 tsp Fennel Seeds / Saunf
  12. Make ready 1/2 tsp cumin powder

Steps to make Amla Launji:

  1. Pressure cook the amla for 4 whistles and remove the seeds and separate the slices.
  2. Add 2 tsp oil in a pan and add Saunf and Kalonji. When it starts crackling add sliced green chilli.
  3. Add amla and Jaggery powder and saute for few minutes on low flame.
  4. Add the spices - haldi, lal mirch, jeera powder and salt and mix. Cover and cook on a low flame for 5-7 minutes or till the gravy thickens.
  5. Wait for the dish to cool down completely, and then store in a jar.
