  29. Prepare 1/2 cup cashew nuts and raisins

  31. Make ready 2 tsp chopped cilantro

Instructions to make Kathal ki Biryani:

  1. First of all prepare the rice and soak the saffron strands in the warm milk.
  2. Wash rice and heat a vessel with water and all the dry whole spices with rice. Cook the rice.
  3. When the rice is cooked 80% then strain the water from the rice and spread the rice on a big size plate.
  4. In the meantime wash and chop the raw Jackfruit and fry them in oil till golden brown in colour and keep them aside. Also fry the cashew nuts and raisins.
  5. Heat a vessel with ghee and put all the dry whole spices in it.
  6. Saute it for 30 seconds and then put the chopped onion in it. Cook it till the onion becomes transluscent and then add the ginger garlic chilli paste in it.
  7. Cook till the raw smell of ginger and garlic has gone. - Then add the tomato puree along with the curd, spices and salt.
  8. When the masala release oil then add the fried Jackfruit in it and cover it for 5 minutes.
  9. Then add the prepared rice over it and put the soaked saffron milk, fried dry fruits and fried onion over it.
  10. Cover the lid and cook it on low flame for 10-15 minutes. - Then your kathal Biryani is ready.
  11. Garnish with chopped coriander leaves and serve hot with raita.
