  2. Prepare 250 gms mix veggies (beans, green peas, cauliflower and carrots)

  24. Prepare 1 cup curd
  25. Take To fry the onions
  26. Take 2-3 tbsp oil
  27. Get 2 big sliced onions

  29. Make ready 1 tbsp ghee
  30. Take 7-8 cashews
  31. Take For biryani /assemble veggies and rice together
  32. Make ready 1 tbsp fried onions
  33. Take 7-8 roasted cashews
  34. Prepare 1 tsp mint leaves
  35. Take 1 tbsp saffron milk

Instructions to make Veg Dum Biryani:

  1. Wash and soak the rice for 1/2 hr. Boil water in a big vessel. Once water starts boiling, add green cardamom, cinnamon stick, green chillies, mint leaves, coriander leaves, ghee and salt. Then add the rice. Cook it till 3/4 of the rice is done. Strain the water and keep the rice aside.
  2. In a bowl, take all the chopped vegetables, marinate the veggies with the ingredients mentioned above under marination. Keep it aside for 1/2 hr. Now in a vessel add oil add the fried onions keeping 1 tbsp of fried onions aside. Add the marinated vegetables. Mix well cover and cook for 1 min. Then add the cooked rice.
  3. Now top it with fried onions, roasted cashews, saffron milk and mint leaves. Now take some dough and roll it and place it on the edges of the vessel in a circular mode. Now cover the lid tightly and keep it on dum for 35-40 minutes on a very slow gas.
  4. When done allow it to cool little so that the excess air is released and then open the lid, remove it in a plate and serve with raita. Enjoy the delicious veg dum biryani.
