- In a kadai, add oil, cumin seed and saute for 30 secs. add onion, salt turmeric and saute for another 4 mins, till onion turns golden brown
- Add tomato and green chilli puree and cook till oil separates. add all the veggies and mix it well
- Cook with lid on, for 7 -8 mins, with little water on a medium flame. Stir it occasionally so that it does not stick to the bottom
- Once it is cooked well, add cumin seed powder, fresh coriander and serve with raita, roti
