- Add 1/2 cup chopped bell pepper(I used red,yellow and green bell pepper),1 medium size chopped tomato,1/4 cup sweet corn.
- Cook until vegetables are soft and no liquid is left in the mixture.
- Now add cooked 1/2 cup black beans(I used canned black beans),salt to taste,1tsp paprika,1/2tsp black pepper powder.Stir everything well.
- Add the cooked rice and stir until rice is well combined with the onion and vegetable mixture.
- Turn off the heat pour 2 tbsp fresh lemon juice and once again give a stir well.
- Divide mexican rice into serving bowls, garnished with chopped green onions,feta cheese,sliced avocado and serve hot.
