- Cut the Sweet potato down the length in half. Clean the skin then add to a microwave to cook both halves.
- Chop up the smoked sausage and cherry Tomatoes add them to a bowl and mix add the glaze.
- When the both halves are cooked like mash scrape out the soft potato mash and add to the sausage and Tomato. Mix well
- Add back to the potato shell and pat the filling down then add the cheese on top 2 tbls on each one. Add back to the microwave for 2 mins to melt the cheese on top.
