Steps to make Barbecue:
- Mix the oil, lemon juice and lemon pepper together. Pour into a suitable size non-metallic dish. Add the chops and coat on both sides. Cover and marinate for 2 hours or more in the refrigerator.
- Mash the boiled potato and sweet potato with the butter and milk, then stir in the chili. Take all to the barbecue.
- At the barbecue
- Prepare barbecue for direct-heat cooking. Arrange coals for direct 2 zone heating. Arrange gas burners likewise.
- Place the chops onto the hot, well-greased grill bars and sear well on both sides. Move to moderate part of the barbecue and continue to cook for about 3 minutes on each side to desired degree. Brush with the seasoning while cooking. Place the sweet potato mash on barbecue to warm.
