  1. Prepare 1 lb Linguica, or more if you want, diced to small pieces
  2. Get 1 Medium Onion, diced
  3. Make ready 2 cloves Garlic, diced
  4. Prepare to taste Ground black pepper
  5. Get 1 tsp Paprika
  6. Prepare 2-3 Bay Leaves
  7. Make ready 1 can No Salt Added Diced Tomatoes, 14.5oz
  8. Prepare 1 tbsp Fresh or Dried Parsley
  9. Take 2 1/4 Cups Water
  10. Prepare 1 1/2 Cups Jasmine Rice

Steps to make Portuguese Rice:

  1. Take the diced Linguica and cook in a frying pan over medium heat. Cook until slightly browned. Remove from the pan to let cool.
  2. Coat the bottom of a medium pot with olive oil. Using a medium high heat, heat the oil for about 2 minutes.
  3. Add the onions, garlic, black pepper, paprika, and bay leaves. Saute the onion mix until the onions are somewhat soft and translucent.
  4. Add the tomatoes to the onion mix and cook together for about 5 minutes. Then add the parsley to the pot, cook for another minute or two.
  5. Then add the water to the pot and bring to a boil. Once everything is boiling, add the rice. Remove the bay leaves.
  6. Stir the rice to mix everything together, then cover the pot, and reduce the heat to low. Cook for 15 minutes.
  7. Add the linguica into the pot, stir to mix together, cover again, and cook another 5 minutes. If you like the crispy rice on the bottom, then cook 10-15 minutes instead.
  8. When done, stir once and let sit for about 5 minutes. That is if you can wait that long. If not and you do not mind hot rice, then dig in!
  9. Serve and Enjoy!
